Today is father's day! Hehehe... we didn't get daddy any present today, but I made a special card for my lovely daddy... As for mummy, I guess the present was in terms of preparing two special meals for breakfast today. I guess months of being deprived of mummy's cooking (since we were in Brisbane) makes it a really special Father's Day treat! Hehehe...
So... what did mummy cook today? Two dishes made with kue teow (flat noodles). The first is fried kue teow with fresh clams, and the second is kue teow soup with tiger prawns and fish balls. The recipes are included below.

So... what did mummy cook today? Two dishes made with kue teow (flat noodles). The first is fried kue teow with fresh clams, and the second is kue teow soup with tiger prawns and fish balls. The recipes are included below.
For the fried kue teow, firstly mummy fried the clams (without shells) with onions, garlic, ginger and chilli paste. Afterwards, the clams are drained and put aside. Another option is to pre-boil (or steam) the clams with its shells first so that this step can be skipped.
Afterwards, saute some onions, followed by chilli paste and one egg. Then put in the kue teow noodles, followed by the clams, beansprouts and shredded left-over chicken. Season with dark soy-sauce, oyster sauce and salt. Finish with some fresh spring onions.
Kue teow soup is relatively easy and is a healthy option since no frying is required. Heat chicken stock over a medium to high heat, add in prawns and fish balls. When the prawns has turned red, put in the kue teow (soft). When the soup starts to boil, throw in some greens and stir in one egg and remove from heat. It's ready!
