Got left-over dates from Ramadan? If yes, you might want to try this new recipe. It's actually for blueberry muffins, but mummy modified it a little bit. The results... a success! Here's the recipe:
INGREDIENTS
(Makes 28 mini-muffins or 12 large 6cm muffins)
1 and 3/4 cups self-raising flour
4-5 tablespoons caster sugar
1 teaspoon baking powder
1 and 1/2 cups dates (seeded and chopped)
1 egg, lightly beaten
1/4 cup milk
1/3 cup butter, melted
DIRECTIONS
Preheat oven to 200 C. Brush oil into bottoms only of muffin tins.
Sift flour, sugar and baking powder into a bowl and stir in dates. In a small bowl, combine egg, milk and melted butter and mix well. Add liquid all at once to flour mixture.
Stir gently with a fork until all dry ingredients are just moistened. Batter should look quite lumpy.
Spoon batter evenly into each muffin cup, filling two-thirds full. Depending on the size of the muffin tin, bake 15 - 25 minutes until golden brown.
Cool on a wire rack, and serve warm with butter.
Note: If the dates are dry and hard, soak for a few seconds in hot water and drain.
